Tassos Stefatos
Executive Chef Tassos Stefatos composes a prolific, sophisticated menu that challenges the palate through its stages. Each course is built on something familiar, a flavor you know, a dish you remember, then taken somewhere you have not been.
His cooking moves between modern European technique and the Greek table he grew up with, treating both with the same seriousness. The result is a menu that rewards attention: precise in execution, generous in spirit, and unwilling to repeat itself from one season to the next.

Service as composition
Behind the menu stands a team that treats service as part of the composition. A cellar of 350 labels, read by a sommelier who pairs by instinct as much as by rule. Cocktails built with the same precision as the plates.

THE PLACE
Volcanic stone, whitewashed Cycladic walls, tables set in the open air. The room was built from the same materials as the island, so that nothing stands between the food and where it comes from.
